{ at } home today...Comfort Food

I don't know about ya'll but cooler weather brings out the urge to cook comfort food- toss out the salad and give me some warm comforting food for my belly!

We actually went down 10 degress from the 3 digit weather we were having and that was Fall like weather around
Last week for dinner I made pork chops & green bean casserole...I know YUM!

fyi- disclaimer~ not for healthy conscious folks or vegetarians
it's comfort food!

Here is what you need:

pork chops{i buy my meat products at costco}
canned green beans
cream of mushroom
french fried onions
1 egg
oven fry,  shake n bake{i prefer} or bread crumbs of some sort

Pork Chops, season to taste
then, follow box directions or if your using bread crumbs- wet the pork chops in the egg wash
and then coat it in the bread crumbs
then, lay in a baking pan
bake as instructed on box or  25-30 minutes on 375
{I like mine well done & crispy}

super easy right?

Now, ready for the green bean casserole??

grab your can opener and open up your canned green beans...
pour them out on a 9x12 baking dish as I have below

now open up your cream of mushroom
and smooth it over the top- do not mix into green beans

throw it in the oven with the pork chops and cook until the cream of mushroom looks bubbly..I'd say 20 minutes...

then,  open your can of french fried onions and layer the top of the dish and put back in the oven for 5 minutes or less...just until the onions get warm and look a little bit greasy{doesn't sound good but...}

and there you go...a comfort food at it's best!

Here are my ideas of comfort food:

Mac n Cheese

I have to give credit to my sister Lallie who makes the best Mac N Cheese!  I look forward to Thanksgiving every year!!

Pot Roast
I made pot roast for the 2nd time in my life and it was actually good this time...I put too many pearl onions tho...learned mistake for next time.

Chicken n Dumplings
My friend Sheryl makes the best Chicken N Dumplings
I follow her reciepe w/ some of my added ingriedents

Mashed Potato's
hands down my sister Martha makes the best in the west!

Beef & Barley Soup
my husband makes a mean beef & barley!

Hope todays post finds warm comfort food thoughts for the weekend!

  1. You had me at "comfort food" and "cooler weather"! It's under 100 degrees and I am feeling like it's fall! LOL! ONLY in Texas! Love your recipe! But more importantly, your kindess towards me has inspired another transformation in my life! Let's continue to stay in touch! : )

  2. I am the same way! I hate to cook in the summer, but I can spend all day in the fall and winter cooking up a storm! There is just something so cozy about a warm good smelling kitchen when it is cold outside!Green bean casserole is the hubs favorite, but since his heart attack I don't make it to often anymore.

Thanks for sharing your comment!! xo Nancy
